Butter Bean and Tomato Salad

Ingredients
420g Tin of Butter Beans (rinsed and drained)
500g (1Lb 2oz) Cherry Tomatoes (quartered)
15 or 20g pack Fresh Coriander (chopped)
2 small Green or Yellow Courgettes (diced small)
1 small Red Onion (chopped)
2 tablespoons of Lemon Juice
3 tablespoons of Olive Oil
1 teaspoon of Ground Cumin

Method
(1) Prepare the ingredients as above.

(2) Tip all the ingredients into a bowl with some salt & pepper, and mix well.

(3) Cover and leave at room temperature until ready to serve.
