Ingredients
1Lb Minced meat
2 Courgettes
2 Onions
2 Carrots
2 Sheets of foil
Method
(1) Slice the courgettes length ways, and scoop out the centres.
(2) Dry fry the mince, chopped onion and grated carrot, until browned.
(3) Fill the two halves of the courgette with the mixture, and place the other halves of the courgette on top.
(4) Cover with foil, and roast in the oven for about 25 minutes, at Gas Mark 3, 160°C.
