6 large Potatoes
100g (4oz) Hard Cheese (grated)
1 x 420g tin Kidney Beans
3 x 300g tins Hot & Spicy Mixed Beans in Spicy Sauce
360ml (12 fl oz) Passata
1 Red Onion
1 clove Garlic
1 teaspoon Chilli Powder
1 teaspoon Cumin Season
(1) Bake 6 large potatoes until soft inside and skins are crispy. Slice into chunky wedges and spread out in a roasting tray. Season well.
(2) Heat 1 tablespoon of oil in a large pan. Fry the red onion and a clove of garlic (both peeled and chopped) for 3 minutes, or until onion is soft. Add the kidney beans and the hot and spicy mixed beans (rinsed and drained) and the Passata. Stir well.
(3) Add 1 teaspoon each of chilli powder and cumin season. Simmer for 5 minutes until sauce has reduced slightly. Pour over the potatoes, then sprinkle on the grated cheese.
(4) Bake in oven at 200°c / Fan 180°c / Gas Mark 6 for about 20-25 minutes until golden and bubbling.
